Overview
Home cooks who braise and stew in batches get a deep stainless steel pressure pan from Prestige. The lid locks by lining up arrow marks and turning the lid handle over the body handle, and a pressure indicator shows when it is working.
A deep pan shape gives room to brown food before the lid goes on, and the double screw handles are built for a secure grip when it is full. The Alpha base is named, but its cooktop compatibility is not spelled out and no pressure rating is given.
Who it's for
Batch cooking for a household on a stovetop suits this pan. Cooks who need confirmed induction support should check with Prestige first, and anyone wanting push button presets should look at electric cookers.
Pros and cons
- Room for family sized batches
- Controlled gasket-release system
- Double screw handles for grip
- Sealing ring and regulator included
- Pressure rating not listed
- Lid closing takes careful alignment
- Bulky to store
Performance notes
Locking the lid traps steam and raises the cooking temperature inside the pan, which shortens cooking times. The regulator controls the pressure, and the indicator shows when it has built. The controlled gasket-release system is a safety feature built into the seal.
