Overview

EWFEN's rectangular cast iron pan gives two cooking surfaces in one: a ribbed side for searing meat and vegetables and a smooth side for eggs, pancakes, and toast. At 16.7 by 9.5 inches it is pre-seasoned and ready to use out of the box.

This is a traditional cast iron piece, not a coated nonstick pan, so it needs the usual cast iron care: dry it right after washing and coat it lightly with oil to prevent rust, and never run it through a dishwasher. EWFEN says its release improves the more the pan is seasoned through use, which is normal for cast iron but worth knowing before expecting nonstick-pan results on day one.

Cast iron heats slower than aluminum but holds that heat longer and more evenly once it gets there, which is what lets the ribbed side put a deep sear and caramelized crust on meat. EWFEN notes that rust from moisture can be scrubbed out with steel wool and re-oiled, which is normal cast iron recovery rather than a defect.
